Pickled Green Tomatoes, for Can-It-Forward Day

You will need (for every pint jar):
Ingredients
- ½ cup distilled white
vinegar (5% acidity)
- ½ cup water
- 1 tsp pickling salt
- 1 tsp dill seed
- 1 bay leaf
- 2 cloves garlic
- 1 sprig fresh dill
- Ball wide mouth pint

- Approx. 1 pound green
tomatoes (sliced)
Instructions
1. Keep clean jar and lid warm.
2. Prepare water bath canner.
3. Add the vinegar, water, and salt to a medium pot. Bring to a boil.
4. In the meantime, wash green tomatoes, remove stem, cut off bottom, and slice into ¼” slices.
5. Add dill seed, bay leaf, garlic, and fresh dill to the bottom of each hot wide mouth pint jar.
6. Layer in tomato slices (you may have to cut some slices in half in order to fit into jar).
7. Pour the hot brine over the tomatoes leaving ½” headspace. Be sure to remove all air bubbles.
8. Wipe rim of jar and add lid.
9. Place jar in water bath canner. Repeat until all jars are filled. Process for 15 minutes.
10. Turn off heat, remove lid, and let jar stand 5 minutes. Remove jar and cool. Check for seal after 24 hours. Lids should not flex up and down in the center when pressed.
11. Allow to stand for 4 – 6 weeks for best flavor before using.
